The glories of BBQ.


The other day my brother-in-law forwarded me an email about auditioning to be the next TV BBQ guru for a new show that is being developed by the same production company that has already made some great shows for the Food Network. The company is Knight TV and they are responsible for The Great Canadian Food Show, License to Grill, Cook Like a Chef, and This Food That Wine. Check it all out here.

Anyway, is seems to me that I was born for this exact gig, so I sent them an audition tape. Then I started getting all philosophical about why I love to BBQ and I wanted to share these happy thoughts with y'all.

I love to BBQ because I believe it is the fastest and most reliable method of producing guaranteed warm-fuzzy eating memories with people that you love. I mean, that is essentially why I cook. Sure it all tastes great, but I do it because food is the currency that we trade in exchange for the services rendered of unforgetable memories, quality conversation, and the shared joy of time spent together. Culture, life, love, family, celebration, and the entire fabric of our society all happen around the kitchen table. BBQ just happens to be one of the best ways to do it.

There is something about the magic alchemy of flame, smoke, and meat that transforms the neurological reaction between the tastebuds and brain into a transcendental glimpse into heaven. But most importantly, BBQ is the food of celebrations, summer, vacations, birthdays, backyard parties, going to the beach, and long weekends. Good BBQ takes careful preparation, diligence, patience, and a lot of love. Hmm, that sounds alot like the real meaning of life, doesn't it?

So friends, I have told the good people at Knight TV to check out this blog to see what I am all about. If I have ever made you amazing BBQ, now is the time that I'm calling in my favours. So when are we going to have a BBQ theme for supper club? Of course you would outshine us all but I am willing to take that risk. Your food Rocks and I love your blog..even if you did put a picture with me in it on there :)

i remember that time in Shelton that you stood outside all day in the nasty Shelton rain smoking that beef on the BBQ. The commintment was great, but the food was even better. Amy and I still talk about it to others. Good times.

i can't look at ribs without being reminded of wade and his passionate commitment to the smoker thing that lived outside on the deck that provided us with heaped portions of the tstiest animal flesh known to mankind.

I didn't like shellfish. In fact, I wasn't altogether that crazy about a great deal of seafood.

Then came the dreaded one and his "Grilled Oysters on the Halfshell."

Wade, remember those oysters in Hawaii? They changed my life, and I mean that sincerely. From shuck to serve you owned those things! You took something I didn't even like and turned them into a delicious dinner!

You left an impression on me that day. I saw your skill and, most importantly, I saw your passion. You LOVE this, and it's obvious! It got me thinking about cooking, and it's something I love to do to this day.

Your site is amazing, and I've been stealing things off of it for weeks now.

I have countless memories of amazing meals prepared lovingly, inventively, hilariously, and studiously by my beloved P. Wade... Among them, one of our Twelfth Day of Christmas feasts where he served a pulled pork that took days to prepare. No one marinates, smokes, roasts, and grills like my favourite guru of the grill. It was amaaaaaaaazing. The pulled pork was the keystone of the meal, but his Triple Happiness Asian Slaw serves as the perfect counterpoint. J'ai de l'eau dans ma bouche!

I know I'm going out on a limb here, but P.Wade, guru of the grill, may hold the key to world peace. What man would raise his hand against his brother having supped at the table of goodness, a table laden with grilled oysters on the half-shell, pulled pork, beer-up-the-butt chicken, mmmmmm....

Kudos to you, my friend! Love the blog.

Wade I think your the best cook I know. I always rave about your cooking to people, "I used to live with one of the best cooks"! I remember having a very yummy bbq I believe for my going away party, it was super yummy, and of course I got to try many things while living with you and Joanna which was one of my favorite things, homemade ice cream, moroccan, mexican, I even have a fond memory of TV and fried pickles...your amazing! You awaken the palet!

It was a warm evening in August, 2003. We had been traveling across the country to the west coast of the island. A bit camped out, gourmet camping food is not my forte. A wonderful stopover in Vancouver on our way home to the prairies. Reconnection with our dear friends, Wade and Jo, Mike and Jen and family. What a lovely evening, eating the tastiest chicken from the bbq, drinking beer, laughing. Their friend Sandra taking photographs of friends around a table. The girls got all dressed up in pretty dresses and the boys made the food! AH it was lovely. I only wish we could be together in the summer a whole lot more. Grace our oldest daughter was making an interesting creation of someone's hair. Was she sticking things into Uncle Wade's dreads? I can't find that detail in my mind but I remember laughing a lot. The children ate the mild chicken and were so happy! The dad's ate the hot and spicy chicken and had red noses.

you do food with excellence.. always made with such care and full of flavors i never knew exisited.. to have meat of yours off the BBQ or anywhere else for that matter now seems like a dream to me.. i think its the passion you put into your cooking.. i would watch any show you were on wade again thanks for doing food with such passion, excellence and creativity. now can i come over?

This is a statement that I've said out loud and thought about your cooking on several occasions. However it never ceases to amaze me the tastes that come out of your experiments. They have NEVER been short of amazing (Just like Ralph, I'm starting to Salivate just thinking about it).

No matter what I throw at this guy (pork, ribs, beef) he always come through with not only the goods, but the INVENTIVE goods.

Probably the most intuitive BBQ artisan I’ve have ever had the pleasure of knowing.

And to stu bish: You hit the nail right on the head with the tag, "intuitive artisan." That IS our Wade. Though "passionate" has to fit in there somewhere, too. And "genius". And easy on the eyes... Who wouldn't want this guy on TV??!

And, thanks, Matt, for reminding me to ask Wade for more of his spice rub. It is transformative, indeed.

Well, what can I say to add so many explicative's !

Perhaps I should mention the fact that the man has the ability to look into ones pantry and create not just one sauce... But many sauces at the same time ! The man has a vision that denies explanation. Release him into your kitchen and you will be amazed at what the dreaded one can produce. I mean, the sauce was already there, embedded in the bedrock of ingredients, it just needed a fine artist to chip and mix, stir and imagine what once was dormant and unseen. Dormality falls away and culinary art comes forth that pleases the eyes, tantalizes the tongue, and inspires the imagination - its very sensual.

The man is indeed a Barbecue stud, but his talents go beyond and even enhances such a discipline. Bring the man meat ! .... And you will see an artist, a visionary, a guru of sauce... At play.

wade, i would have to say that you do make the best ribs ever!! and, the first time i ever had lamb was from your bbq. i have never had lamb that good since! you are amazing!

when i think about chicken i think about wade. not because he is one, but rather because he is the furthest from it. he will try anything! and it never ceases to amaze me that no matter what kind of food he attempts to cook, he excels!

one of my fave meals consisted of chicken, beer and a barbeque. you smoked those things all day in the barbeque and when they were ready, you served them on homemade tortillas with Cucumber and Tomato Shirazi Salad. That was all kinds of yummy goodness. When is the next time I have a flight scheduled to Vancouver?

...I do recall a yummy BBQed chicken in a chicken salad you made us for a trip to portland. I was amazed you bothered to BBQ it, but it did taste better BBQed. I really did love the thai sauce you created that your wife made us. go wade.
